When I was in my early twenties, I had many health issues and allergies to foods, such as wheat and dairy. At the time I was living in NYC where alternative health diets and health food restaurants were all around me. It was then that I discovered the raw food diet.

The raw food diet omits most common food allergens, such as wheat, gluten, dairy, soy, beans/legumes, conventional peanuts, as well as meat and cooked food of any kind. Because it was so easy to access there, with the best chefs in the world inventing the most incredible recipes, I was able to eat it very often and noticed remarkable changes in my physical and emotional health.

Raw, Vegan, Gluten-Free Perfect Pudding Recipe

This pudding made from coconut milk and raw chocolate—a superfood—is three meals in one

A note from the chef:

This recipe is gluten-free, low glycemic, dairy-free, peanut-free, and vegan.

Raw Coconut Milk

For this recipe, I used a store-bought brand of coconut milk; however, traditionally coconut milk is made by blending the meat and raw unpasteurized water of a fresh coconut together. Some health food stores sell raw coconut meat and raw coconut water separately, or you can also buy fresh young Thai coconuts and make it yourself.

Raw Chocolate

Raw chocolate is considered to be a superfood as contains many important vitamins and minerals including magnesium, calcium, sulfur, zinc, iron, copper, potassium and manganese; vitamins B1, B2, B3, B5 and B9; polyphenols called flavonoids, with antioxidant properties; and oleic, an essential heart-healthy monounsaturated fat.

Three Meals in One

I usually eat this pudding as a breakfast meal, but it can also be served as a yummy dessert dip for fruit or even as a smoothie. To make it as a smoothie, just add 1/2 cup more coconut milk (or more to taste). This will make the pudding more liquefied.

When I eat this pudding for breakfast I usually mix in some berries like blueberries or strawberries. Get creative and add anything you like, such as granola, hemp seeds, or any other type of fruit that pairs well with a creamy chocolate pudding.
