Let the kids have candy and try this healthy Halloween treat with savoury seasonings to please a grown-up palate. Put away the measuring spoons for these pumpkin seeds – seasoning measurements depend on the amount of seeds and personal preference, so season to your own individual taste!

Sweet Balsamic Roasted Pumpkin Seeds

Ingredients

Seeds of 1 medium pumpkin (about ½ cup)

Good quality balsamic vinegar

Fruity extra-virgin oil

Kosher salt

 

Instructions

Scoop out pumpkin seeds into a colander and remove the stringy bits by running them under cold water.

Spread seeds on a tea towel and dry them.

Spread on a parchment lined baking sheet in a single layer and bake at 275ºF for 20 to 25 minutes.

Toss seeds in equal parts balsamic vinegar and olive oil and sprinkle with kosher salt. Spread on a parchment lined baking sheet and bake for 10-15 minutes at 275ºF, or until crisp.

 

Parmesan and Black Pepper Roasted Pumpkin Seeds

Ingredients

Seeds of 1 medium pumpkin (about ½ cup)

Fresh ground black pepper

Extra-virgin oil

1/4 cup grated Parmesan cheese

 

Instructions

Scoop out pumpkin seeds into a colander and remove the stringy bits by running them under cold water.

Spread them on a tea towel and dry the seeds.

Put seeds in a bowl and toss with olive oil and plenty of fresh ground pepper.

Spread on a parchment lined baking sheet in a single layer and bake at 275ºF for 20 to 25 minutes.

 

After removing from the oven, put seeds in a bowl and mix with grated cheese. Spread on a parchment lined baking sheet and put back in the oven to brown the cheese – this happens quickly so watch carefully!

 

Chili and Lime Roasted Pumpkin Seeds

Ingredients

Seeds of 1 medium pumpkin (about ½ cup)

Extra-virgin oil

Chili powder

Sea salt

Fresh-squeezed lime juice

Instructions

Scoop out pumpkin seeds into a colander and remove the stringy bits by running them under cold water.

Spread them on a tea towel and dry the seeds.

Put seeds in a bowl and toss with olive oil, chili powder, lime juice, and salt.

Spread on a parchment lined baking sheet in a single layer and bake at 275ºF for 20 to 25 minutes.
