With the sun shining and summer just around the corner, I thought it might be time to suggest a few easy picnic solutions for that after work dinner at the park or weekend family fun.
Family picnic basics
Great blanket: Water-resistant is key for keeping bums dry on the grass.
Cutlery for the family: Eating with your hands is great but granny may prefer a fork and knife.
Cloth napkins: Grab a few cloth napkins for those dirty fingers after that juicy chicken.
Soccer ball and frisbee: Bring along some fun and games to get the whole family moving.
Sun block, sun glasses and sun hats: Don’t for get to protect the little ones (and big ones, too) from the suns rays.

Crock Pot Roasted Chicken
We all love that roasted chicken from the grocery store but did you know it’s easy to do yourself at home with an organic chicken?
5lb whole organic, free range chicken
Salt & pepper
Place halved lemon and thyme in the cavity. Sprinkle outside with a bit of salt and pepper. Roast in the oven on high for 2.5 hours.
Turkey Wraps with Cream Cheese and Cranberry
1 tbsp dried cranberries or (1/8 cup) diced frozen
2 tbsp cream cheese, softened, or feta
1 8-inch whole wheat tortilla
2-3 slices deli-style roasted turkey breast (or try thinly sliced/shredded chicken)
1/2 cup shredded lettuce or spinach
Wrap up and slice into quarters for a great bite sized meal.
Mediterranean Couscous Salad
This ‘Eat Clean Recipe’ will have the whole family digging in for seconds.
1 cup dry whole wheat couscous
3/4 cup organic low-sodium chicken or vegetable stock
3/4 cup fresh squeezed orange juice (from 1 large orange)
2 tbsp extra virgin olive oil
1 tbsp lime juice (from 1 lime)
1/2 cup grape tomatoes, cut in half
1/4 cup green onions, chopped
1 cup cucumber, chopped and seeded
1/4 cup chopped fresh oregano
1/2 cup goat cheese or feta cheese
Sea salt and black pepper to taste

Baguette and cheese – great with the roasted chicken, and easily made into open faced sandwiches.
Fruit salad - grab a few local strawberries, throw in a few grapes, toss in some melon or watermelon, and voila!
Drinks of your choice – be sure to bring your beverages of choice in stainless steel, reusable bottles to minimize your waste.
